What's for Dinner {October Week 2}

I just love having a meal plan every week.  It makes dinner less of a struggle, because I already know what I am going to do.

Today is Canadian Thanksgiving, living so close to Canada, I know several people going home to celebrate the holiday.  A happy thanksgiving to all.

This week is a short week because Zippy has Thursday and Friday off from school.  I'm excited because I know that I will have the time to really cook a couple of meals.  

What's for dinner this week?

Monday - Beef Stew

Tuesday - Grilled Cheese and Tomato Soup

Wednesday - Chicken Nuggets

Thursday - Italian Honey Mustard Baked Chicken

Friday - Honey Apple Glazed Turkey Breast

Saturday - Chili

Sunday - BBQ Chicken Braid

Menu Plan September {week 2}

School is back in, which means the schedule is changing. One of those changes is my working some days during dinner prep time.  In answer I am do a lot more freezer and crock pot cooking.  The hubs is also pitching in.  He is a really good cook, but he doesn't plan or use any sort of recipe.  So my plan is to get meat and veg to let him put together what he may.

A couple of weeks ago now I spent an afternoon doing freezer cooking with some friends.  It was lots of fun.  We each cooked enough so each person could take one of each dish home.  I cooked baked pasta (a variant of this baked ziti recipe).



The Plan for this week

Breakfast Options - {healthy breakfast on the go}
  • Eggs (hard boiled)
  • Waffles
  • Milk
  • Apples
  • Peaches
  • Bananas
Lunch Options - {brown bagable}
  • Roast beef and Cheese Sandwich
  • Apples
  • Popcorn
  • Squished Cheese Sandwich
  • Cucumbers 
  • Tuna and Crackers
Dinner 
  • Chicken (x2) - for hubs to make something fabulous
  • Mexican Bake (from the freezer)
  • Dinner at Church - Pasta
  • Chili 
  • Baked Chicken Legs
  • Chicken Salad (with leftover chicken from the legs).
Freezer Cooking
  • Chili - Making a quadruple batch when I make chili for dinner.

Menu Planning - August {week 3}

This week was another bad week of eating out and not following the plan.  It occurs to me that this, like weight loss runs in cycles.  One week is up, the next down, but in the end it all averages out.  Maybe I should look at a monthly grocery budget rather than a weekly one.

No new meals and there will be some carry over from last week (as we ate out instead of eating planned meals)

    Menu Planning - August {week 2}

    This week was good we only ate out as much as planned (pizza night woohoo).  We tried one new recipe, sloppy joe turnovers with great success.  Everyone thought I should make them again.  With a couple of modifications to the recipe (I used turkey instead of beef and I used a canned sloppy joe mix) this turned into a $5.00 meal.

    Menu Planning - August {week 1}

    Last week was not all together successful when it came to the meal plan,  due mostly to the fact that I felt like a wet towel for several days.  We ended up eating out ($5 pizza) 3 times last week.

    We did try one new dish last week, egg and spinach quiche.  It was good, two out of three people said I should make it again.  It calls for fat free cheese and egg whites, I used real cheese and the whole egg, in addition I added garlic and smoked sea salt in lieu of hot sauce.  We did have some trouble getting the quiche out of the paper cups, so if I make it again I will just make it in the muffin tin, or do it as a scramble on the stove top.
